Auvergne in your plate

First, there are the stars, the not-to-be-missed, the famous… Of course, we mean the cheeses of Auvergne: Saint-Nectaire, Cantal or Bleu d’Auvergne…

BUT – since there is always a BUT – Pays d’Issoire is not just cheese. This is shown by the fact that we also say “Great wines to drink, beautiful girls to see” in Issoire! Although Auvergne is not widely known for its wine, the Pays d’Issoire region, with its favourable climate, still has a long winemaking tradition and produces one of Auvergne’s top wines: the AOP Côtes d’Auvergnes de Boudes.

Wine, cheeses, charcuterie, Salers, Charolaise or Aubrac meat from the summer pastures of Le Cézallier, but also cereals, honey, vegetables, fruit and herbs can be bought directly from farmers or at Pays d’Issoire markets.

Our restaurant chefs are also keen to prepare dishes using ingredients from Pays d’Issoire. Whether Michelin-starred chefs, chefs with the Michelin Bib Gourmand rating or the maître restaurateur title or simply lovers of good food, they live and work at the heart of Auvergne, serving dishes that give pride of place to local produce, while adding their own personal touch, their own creativity and sensibility.
